After a month or two, the water has a metallic, sour, lemon, sour taste, whatever you call it. What exactly is this? I know it's time to change the filter, I just want to know where the taste comes from and if it's bad to drink.

Most water filters work through ion exchange, which means that the filter removes unwanted cations from the water and replaces them with hydrogen ions. Hydrogen ions are acidic. There are usually not enough hydrogen ions to taste, but if the water you are filtering is very dirty, it will contain more hydrogen ions than usual, which makes the filtered water bitter.

In terms of safety, it is no worse than unfiltered water.
